    Experimental research has demonstrated the likelihood of hypertrophy of the thyroid gland when laboratory rats are fed cabbage and sunflower seeds excessively. Thus, the syn thesis of thyroid hormones can be deregulated by blocking the capture of iodine, a process that can be influenced by the excessive consumption of vegetable products containing thiocyanate. Thiocyanate is capable of inhibiting the organization of iodine by blocking the iodination of thyroglobulin and the conjugation of iodotyrosines. Quantitative sources of goitrogenic thi ocyanates are some species of vegetables with a high content of cyanogenic glycosides. The analysis of the concentration in the blood plasma of iodinated thyroid hormones demonstrated that thiocyanate reduces their synthesis and secretion.
